Our culture and rennet is from our new line of products that are from Italy and are all NON-GMOand have proven out to be fantastic in flavor and texture. We even carry new yogurt cultures! The Tome Mold is used to make cheese with 2 to 3 gallons of milk. You can use the bottom mold part even for molding or just draining soft cheeses, or add the follower on top with some weight to press your harder cheeses like Colby and Cheddar.
Add your favorite spices to create a variety of your favorite cheeses, such as chilli peppers, dill, chives, cilantro, garlic, roasted red pepper, sun-dried tomatoes, etc. And with this same culture you can even make delicious soft spreadable cheese and even fresh cultured butter!
We provide you with our recipe booklet, but if you are interested in purchasing a great cheesemaking book, you can add our favorite one as a complement to this kit. Because cheese making really is a science as well as a culinary art, we suggest the best book called The Cheesemaker's Manual by Margaret Morris. At Homesteader's Supply Farm we have used many of the books available, but this one is great by far for an all around how-to, and why, and trouble-shooting, along with photos to help.
